Tourist-gastronomic route «Valle del mextlapique y el maguey. Sazón de mil años»

Abstract

In this work, a tourist-gastronomic route is proposed, taking as study area the Central Valleys of the State of Mexico, specifically the municipalities of San Antonio la Isla, Tenango del Valle, Almoloya del Río, Santiago Tianguistenco, Capulhuac and Ocoyoacac. The main objective will be to encourage knowledge, conservation, and appreciation of traditional cuisine, based on the identification of nodes of tourist interest and their variety of gastronomic products. The foregoing through an exploratory and qualitative research, whose purpose is focused on providing strategies that contribute to the local development of the population, in the sustainable use of natural resources and in the preservation of cultural heritage.
