Abstract

The objective of this work was to design a gastronomic route between Mexico and Colombia based on its endemic products: corn and beans, which vindicates the traditional cuisine of these two products and strengthens gastronomic tourism to both countries, uniting the will of teachers and students of the Universidad Autónoma del Estado de México and the University Institution Colegio Mayor de Antioquia. A gastronomic route between both countries was recognized, the traditional gastronomic offer whose main components are corn and beans was explored; the work of the families dedicated to the cultivation of these products was identified, investigating their agricultural and culinary traditions. Among the findings is a varied gastronomic offer of dishes prepared in restaurants by culinary artisans who preserve the tradition with these products and the similarity in some preparations with different names in each country.
